Ingredients for the Cookies:

  • 2 cups of Dolce Frutti Nonpareil Almond

  • 1/2 cup coconut flour

  • 1/2 cup maple syrup or honey (for a natural sweetener)

  • 1/4 cup coconut oil (melted)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • Optional: chocolate chips, dried cranberries, or chopped pistachios for a festive touch

For Frosting (Optional):

  • 1/2 cup powdered sugar (or sweetener of choice)

  • 2 tbsp almond milk

  • Orange zest or sprinkles for decoration

How to Prepare Gluten-Free Almond Flour:

Almond flour from the market can be both costly and risky. However, why purchase from the market when it can be made at home very easily. Here's how. 

  1. Measure 2 cups of Dolce Frutti Nonpareil Almonds. These are premium almonds that help make a very smooth, and flavorful almond flour 
  2. Put the almonds into a high-speed blender or food processor.  Blend it until you get a fine flour.
  3. Now, use a cheesecloth to strain the mixture. The method helps remove any larger almond pieces.

How to Prepare the Cookies

1. Preheat & Prepare:

Start by preheating your oven to 350°F (175°C). Line a baking tray with parchment paper for easy cleanup.

2. Mix the Dough:

Take a large bowl and combine your prepared flour, coconut flour, baking soda and salt. Take another bowl to whisk the eggs. Add maple syrup, and coconut oil in the eggs. Now, add all the dry ingredients in the same bowl. Mix until well combined. 

3. Shape the Cookies:

Roll the dough into small balls. Place them on the prepared baking sheet and flatten each ball slightly with the back of a spoon or your fingers. You can add chocolate chunks or chocolate chips. It makes the cookies even more tasty. 

4. Bake:

Bake the cookies in the preheated oven for 10-12 minutes, or until they turn golden brown around the edges. Once done, remove from the oven and allow to cool on a wire rack.

5. Frost & Decorate

If you want to add an extra sweet touch, whisk together the powdered sugar and almond milk to create a simple glaze. Drizzle the frosting over your cooled cookies and finish with a sprinkle of orange zest or colorful sprinkles for that holiday feel.
