Kimri Stage
The Kimri stage is the earliest period of development of Barhi dates. During the Kimri stage, the dates are small, green, and hard. At this stage, they are not suitable for consumption. As the Barhi dates ripen, it will enter the Khalal stage.
Khalal Stage
During this phase, the dates will go from green to a yellowish color. The texture softens but is still hard and crunchy. At this point the date is suitable for eating. After the Khalal stage is the Rutab stage.
Rutab Stage
The color deepens, and the sugar content continues to increase, resulting in a sweeter taste. Rutab dates are fully ripe and have a wrinkled appearance, making them ideal for fresh consumption. The flavor is rich, and the texture is moist and sticky. The final stage of the Barhi date is the Tamar stage.
Tamar Stage
This is when the date becomes fully dried. Its sugar content is highly concentrated with a very chewy and sweet taste. Together all these stages offer a unique flavor for peoples different culinary preferences.
